Nashville fun

Hi all, We decided this past spring break to take the kids to Nashville. While it seems to be aimed towards adult weekend getaways, we found plenty of things to do with the kids! Where to eat : Hattie B’s was a highly recommended stop and we really enjoyed it! We went late in the evening and only waited about 15-20 minutes to get it. If you get a table by the window you can watch all the different people go by.  Biscuit love was top on the list. Many people have warned the line can get long but I think luck was on our side this week. We also went during the weekday so that helped! Martin’s BBQ. If there is one place I would happily eat everyday while there, it was Martin’s. The food was delicious and just what you’re looking for when it comes to BBQ. Aquarium restaurant in Opry Mills. While it’s a “touristy” place, if you’re looking for a fun restaurant to take the kids this is great. Spring are you here? It’s me again.

Hi all, It’s been quite a long time! Hoping to slowly come back and rediscover my love for blogging. We have a lot of activities planned for this summer so be sure to follow along! Life is organized chaos with three kids, but we’re bringing you a long for the ride. If you have to take care of your kids anyway, might as well be in a nice location am I right?  As always, if you need tips on anything Disney or travel or even food related; I’m only a message away!

Happy Valentine's Day! For the hopeless romantics out there (and the parents doing virtual school with their kids), let’s add alcohol to the mix. After all, the majority of us have been stuck at home more this past year. I have a big sweet tooth, if you couldn’t tell, and fruity bubbly drinks are hard to resist. Sit back on the couch with your loved one and talk about silly memories. We have too many to count, but the ones that stick out usually involve the kids. Three days after we brought Penny home, Noah asked if it was time to take her back to the hospital. Oops, that’s not how sisters work, Noah!   Any sparkling bubbly. I chose rosé. Add one scoop of raspberry sorbet. Garnish with fruit on the rim. Sending you all so much love and hoping you get to spend the day exactly as you want! With love Carolina 

Yo-da one for me

There is nothing more I love, than to snack on a “hearty” charcuterie board. (See what I did there.) In the spirit of Valentine’s Day, this board will feature all sorts of pinks and reds. I once read that the reason we 90s kid’s enjoyed charcuterie boards so much is that we grew up on Lunchables.   Savory or sweet? How about a mixture of both! Many of these items I snagged at Aldi. You don’t have to spend big to make a big statement.  I've put together the following: Fresh mozzarella  Mixed nuts Strawberries  Watermelon  Assorted chocolates  Jelly beans Prosciutto  Babybel cheese And cheesecake slices I scored at Aldi for $1.99! I like to have sweets, soft textures, crunchy items, and savory bits. Experiment to your liking. You can make a large board or a small one.   Ahh, Valentine’s Day. A chance to be extra romantic and lovey. Many picture the fancy meals they will be having or the box of chocolates that they’re eager to open. Kids pack with excitement their valentines for their classmates. At the Wright household, it’s usually a day we get Noah and Penny little heart shaped candies, and I make heart-shaped pancakes. Traditionally I spend the night before dipping strawberries in chocolate and helping Noah with his class Valentines. Post-Covid, well, things have looked differently. Since I am both his mom and semi teacher, I figured we’d try to make things a little unique this year. Throughout the week, I will be popping in to spread some love on here through sweets. Today we start with something simple. Valentine’s Day trail mix! Home is wherever I’m with you..and also my workplace now

Happy new year! At least, I hope it will be a happy one. Fingers crossed, right? As I start the year off as a mom of three, I am finding that my arms are pulled in different directions. I am outnumbered, which is awesome... This year I’d like to approach food in a more family-style way—thoughts, ideas, suggestions, randomness that crosses my mind. With baking, measurements are crucial. I love baking but find my cooking methods are more on the “touch of this, a handful of that, a sprinkle of this.” They borderline Chopped. Me taking a look in the fridge and telling myself, “ what can I make with what I have?” Exhibit A.  Breakfast bowls are what I cling to when I need a break from the usual just eggs and meat.  Start with your base. I chose hash browns, but I’ve also loved doing riced cauliflower or even real rice. Next is your veggies. I try to sauté the veggies so that they soften but still have a crunch to them. Sweet victory

Hi all, Summertime is often filled with cold beverages and cold foods! Unless you grew up Hispanic, which means you are aware that we tend to eat hot soup dishes like pozole no matter what the weather outside is like! When pairing dessert with our meals, I try and find desserts that are also going to give you the crisp, refreshing taste—that sweet summer indulgence. I also aim for things that require being next to the oven for the least amount of time. One of my go-to recipes is strawberry poke cake. This cake has become a staple in our house for birthdays and special occasions, and anytime we want cake. So basically we have it year-round. I adore how quickly and easy it is to pull together and that it requires only a small amount of ingredients. Not only that, but you’ll find that it’s not overly sweet.
