Sweet victory

Hi all,

Summertime is often filled with cold beverages and cold foods! Unless you grew up Hispanic, which means you are aware that we tend to eat hot soup dishes like pozole no matter what the weather outside is like! When pairing dessert with our meals, I try and find desserts that are also going to give you the crisp, refreshing taste—that sweet summer indulgence. I also aim for things that require being next to the oven for the least amount of time. One of my go-to recipes is strawberry poke cake. This cake has become a staple in our house for birthdays and special occasions, and anytime we want cake. So basically we have it year-round. I adore how quickly and easy it is to pull together and that it requires only a small amount of ingredients. Not only that, but you’ll find that it’s not overly sweet. Just a great way to end your meal on a high note!

 

What you need:

Yellow can mix box-and required ingredients to make said cake such as oil, eggs, and water. All box mixes vary in the amount needed.

One small tub of whipped cream

One small strawberry jello mix packet

Strawberries to garnish (or if you’re like me, sprinkles and almond slivers as well!)

 

Preheat oven to 350°. In a mixing bowl, combine your cake mix ingredients. Grab a 13x9 inch baking pan and generously grease the bottom and sides with either nonstick spray or cooking oil. Pour your cake batter in the pan and bake as directed. 



Once your cake is cooked and cooled, you’ll need to grab a toothpick/fork/back of the spoon to create holes in your cake; this is where the jello mix will go. Trust me and hang in there. In a bowl, dump your jello mix with two cups cold water and stir until incorporated. Next, pour the mixture over your cake, trying to reach all the books and crannies. You want the cake to absorb the mix. I tend to do this part slowly to gauge how much of the liquid I need. I find that I don’t always use the entire two cups. More like one and a half, but I like to have extra just in case. Cover your cake and let it sit in the fridge for at least 10-15 minutes. The next step is to have fun! Evenly spread your whipped cream over the top of the cake and add any desired toppings such as the strawberries. Your finished product will have people thinking you spent extra time baking this cake, and you’ll wink knowing you were able to pull this together so fast!
