I wanted to venture out and try a new recipe. Something jaw dropping but still manageable for a mom of two little ones. I’d highly recommend this if you’re having friends over for dinner or if you’re choosing to enjoy a nice romantic night at home. People will marvel at how long you must have spent making dinner. For those of you who are a little timid when it comes to cooking fish that stares back at you, I’d suggest getting the fish cleaned and headless at the grocery store. Meijer had these whole catfish all ready to go for me.  

What you need:
  • Three catfish
  • Two lemons 
  • Half a cup of bread seasoning
  • Italian seasoning
  • Salt
  • Pepper
  • Three cloves of garlic
  • Olive oil


Pre heat oven to 450°. Make sure to dry off your catfish with a clean paper towel. Drizzle olive oil over each fillet and lay them next to each other on a cookie sheet. Thinly slice your lemons and place two slices under each catfish. Smash your clove of garlic with the blade of the knife. This will allow you to take the skin off more easily. Slide the clove of garlic and a slice of lemon into each fish cavity. Season with salt, pepper, and Italian seasoning. Carefully sprinkle the breadcrumbs on top of each catfish. Bake for 20-25 minutes or until the fish is white and flaky. That’s all you have to do! One tip I’d suggest is cutting up some zucchini, broccoli, or squash and drizzling olive oil, salt, and pepper on top of your veggies. Place them on one side of the cookie sheet and you have a whole meal with very little clean up. 




This meal was inspired by my need to eat something that wasn’t a typical meal at our house. You can only eat so many chicken nuggets before you don’t even want to hear a chicken on TV let alone see one. My hope was to provide you guys with a more sophisticated looking recipe that is still super easy to manage. I also wanted to try a meal that reminded me spring/summer is surely around the corner and the snow won’t keep coming back. Anyone else out there experiencing a second winter?
