Everybody gets what they want

I’m going to let penny lead tonight’s meal. If you could hear how quickly she’s rambling about mixing and turning, she’s a pro at this. I’m trying to let the kids become more involved in the prepping/cooking process. Sometimes it seems that if they help me, they’re more likely to eat all of their dinner. It also means that somehow it’s a little easier to make dinner; since they’re right next to me and not in the other room fighting over something important like a candy wrapper or a vague round small item that the other must have taken. Did I lose you there? Because I don’t understand their fights either. If you’re thinking of bringing your kids into the kitchen, start with a small, simple task like cleaning off vegetables or opening items. I purchased kid-friendly knives off amazon since the kids enjoy cutting up food. It makes them feel like chefs. 

For those of you who have little ones that love chicken nuggets, or even those of you who are adults and feel the same way, today will be the day you make them all on your own! 

What you need:

One pound of thin boneless skinless chicken breast

Two eggs

Coconut panko bread crumbs or just regular breadcrumbs

Two broccoli crowns

One tablespoon of butter

One package of steam and serve rice

Salt

Pepper


It's going to get a little messy but, relax and have some fun with the kids!

Start by cracking and whisking your eggs in a small bowl. Add salt and pepper. In a separate plate pour a layer of bread crumbs. Preheat your oven to 375 degrees. To make clean up easier, line a cookie sheet with foil. Next, you’re going to cut your chicken breast into small cubes. I like to keep them at about one inch. Take a piece of chicken and dip it into the egg mixture. Then transfer it over to the plate with bread crumbs and evenly coat. (Insert penny waving her hands in a circle saying “and mix it and mix it”). Place on the cookie sheet and repeat the process; this is a great time to let your kids help!


Bake for 20 minutes. While your chicken is baking, place your package of rice in the microwave and cook as directed. I like the brand VeeTee. Next place your broccoli in a microwaveable container with a lid. Put one tablespoon of butter on top and add salt/pepper.; and microwave for 2 minutes. See how easy that meal was? You also got your kids to help make dinner. They get their precious chicken nuggets, and you get a home-cooked meal. Now if only I could try and make loading the dishwasher sound just as fun.
