Bring on the color

Hi all,

This weeks theme will be meals that can be made in 30 minutes or less. I’ve been trying to incorporate more vegetables into the kid's meals and I find that I need to be creative. I also noticed that when meals look more colorful, they are more likely to eat them. You know that saying, "we eat with our eyes",  that runs true in our house. I try and lead by example and eat healthier items in front of them too. So my dilemma is; what oh what do I feed them that is healthier than running through the drive-thru window but still equally as fast?






Today I’m showing you all, rainbow roll-ups. This idea is quick and requires no cooking if you purchase a rotisserie chicken! 

Items needed:

1. Rotisserie chicken 
2. Large leaf lettuce
3. Tri-colored peppers, preferably pre-cut to save you time.
4. Carrot match sticks
5. Shredded cabbage
6. Dipping sauce of choice (For the kids, I serve Ranch, and for the adults, I use the spicy Bang Bang sauce)
7. Parchment paper (optional)


Start by taking one side of the chicken breast and cut it into cubes. Then lay out a piece of lettuce and make a section for the chicken and carefully add the veggies. Roll into a mock taco and wrap with parchment paper to keep its taco form. If you don’t have parchment paper feel free to use a napkin. As I was preparing these, Penny wandered by and would sneak some bites. Score one for mom! She doesn’t even realize it’s good for her. Noah is in a carrot craze lately, and this proved to be a good option. The nice thing about this meal is you can customize the roll for each person. You’ll also feel like you made a masterpiece with all the beautiful colors. I think next time I’ll even add some sliced avocado. Make sure to save any leftover chicken for our next meal idea!


With all of your free time, you might be able to find a cozy spot on the couch and catch up on some reading. Or perhaps you can try to watch that show you’ve only been able to enjoy in 5-minute increments because the kids keep asking vital questions. You may even find yourself hiding out in the closet to scroll through your phone for a few minutes before your kids plead with you that they can only really watch YouTube kids on your phone and not the other multiple devices that are available in the house. On that note, I leave you. Apparently, it’s too quiet and the kids have realized I’m not in their peripheral view.
