Baby, it's so darn cold outside

Hi all, Noah is going on day three of school snow days and day 100 of cabin fever. Penny is right there with him. So today's post will be about what to do to keep the wild things occupied and keep you from going crazy too. It happens to the best of us. If you live anywhere near where the polar vortex will cross (at this point it seems like 70 percent of the US), please be safe and stay indoors unless you have to leave. For those of you who may have no choice but to leave the comfort and warmth of your own home, stay safe, bundle up, and take your time.  I decided to look in my pantry and see what I could find. Lucky me found a package of deep pan pizza crust mix; these packages can usually be purchased at Meijer for about  $1 . I also had a jar of pizza sauce and pepperoni. For tonight's meal feel free to add as many or as little toppings as you like. Try and throw in anything that you find in your fridge like spinach, leftover chicken, (or in my case deli turkey br...

It's rumble time

Hi all, The one interest that we all share in our house is an interest in wrestling. I'm talking about WWE (World Wrestling Entertainment) in specific. I grew up watching longtime wrestling stars such as The Hulk, The Rock, Stone Cold Steve Austin, etc. My dad shared that interest with my brothers and I, the same way Devon's dad did with him. It only seemed natural to pass that onto our kids. Penny is a little too small to understand what is going on truly but Noah, he enjoys watching. At the wee age of five (ok so not so little but little to me), Noah has been to 3 live events. He has sat in the bleachers chanting out the town hero or current heel (bad guy) while standing proudly wearing his WWE t-shirts. The last event we attended he got the chance to shake hands and take pictures with some of the wrestlers. To see the look of excitement on his face was priceless. I can't say it was just Noah who was excited about getting to High-five them all. On the weeke...

Winter, is that you?

Hi all, The temperature here in Michigan on the lakeshore has been rather chilly. Although, having lived in Michigan all my life I can’t say it’s surprising. I can, however say it sucks. I’d also like to point out that I’m not one of those people who gripe in the summer. I try and bask in the sun for as long as possible. Anyhow, being that I, unfortunately can’t hop on a plane and set off to somewhere warm until Michigan gets its act together, dinner that reminds me of warm weather will have to do. Salmon, in my opinion, is a speedy and easy meal to make. It doesn’t have a “super” fishy taste, and it’s a good one to try if you’d like to incorporate more fish into your diet. My kids love salmon. They don’t understand how much salmon costs so when they inhale it like high end "chicken nuggets," I try to remind them to slow down. I’ve learned some cooking tips when it comes to dealing with salmon.  Don’t shy away from asking your butcher/meat counter to cut your pieces fr...

Winter in the mitten state

Hi all! My name is Carolina, and I was born and raised in good old Michigan. I work full time; I'm a wife, and mom of two crazy, loud, and free-spirited kids. My five-year-old son, Noah and my two-year-old daughter, Penelope. Penny for short. As any mom would understand, while we may choose creative and kind words to describe our children, when I say: "free-spirited" I refer to my two-nager who has an opinion of her own. Her wild spirit and confidence are something I often look up to and envy...when I'm not rolling my eyes at her little attitude. I can say that she gets it from my husband. My son, on the other hand, is more cautious. Firstborn syndrome I believe is what people refer it as. I see many of my traits in him. The careful, alert to emotion, looking for assurance is something that I would say describes myself as a child and through most of my adult years. Something I try and work on as I navigate my children through this thing called life.  My husba...
