Hi all, Easter is just around the corner. Many of you may be visiting family during this time and need a dish to bring along with you. Today I wanted to provide you guys with a pasta dish and dessert. The pasta dish has become one of my favorite summer salads. The colors in the pasta make this meal look gorgeous. The best part is that you can assemble this the night before to save you time the day of travel. I also like to make this beforehand so that the flavors marinade together. We'll start with the pasta first then move on to dessert. Living la vida in Michigan

Hi all, I wanted to venture out and try a new recipe. Something jaw dropping but still manageable for a mom of two little ones. I’d highly recommend this if you’re having friends over for dinner or if you’re choosing to enjoy a nice romantic night at home. People will marvel at how long you must have spent making dinner. For those of you who are a little timid when it comes to cooking fish that stares back at you, I’d suggest getting the fish cleaned and headless at the grocery store. Meijer had these whole catfish all ready to go for me.   What you need: Three catfish Two lemons  Half a cup of bread seasoning Italian seasoning Salt Pepper Three cloves of garlic Olive oil Pre heat oven to 450°. Make sure to dry off your catfish with a clean paper towel. Drizzle olive oil over each fillet and lay them next to each other on a cookie sheet. Quick and Easy

Hi all, I'm finally back! After a pretty hectic and long work week last week, I took the weekend to recover. Of course, many of you who have small children realize that while you may be physically exhausted, your little ones may not understand that. My kids were full of energy and ready to take on the weekend. I however, was not. I tried to keep them occupied with small activities, and that seemed to work for the most part. This week as I went back to my normal work hours, it felt like I was trying to play catch up. I finally feel well rested and ready to take on my recipes and connecting with you all. Today I wanted to tackle the topic of salads. I have always liked salad but never considered them options for meal replacements. I enjoyed them as side salads.
